The grapes are destemmed and spontaneously fermented in stainless steel tanks for 45 days. For the second fermentation, a blend of sparkling yeast + organic sugar as the tirage liqueur. Undisgorged. Notes of gooseberry, lychee, and pears. 9. 9% ABV To be enjoyed on its own whenever you feel like it, or with mild cheeses, roasted chicken or smoked fish.
