Dukes Single Vineyard Shiraz Hilltops The subtlety and delicate fruitHarvested selectively in early April at peak ripeness, the fruit for this wine underwent meticulous care from start to finish. Destemmed into closed top fermenters, the juice was lightly drained at the crusher to intensify the must. After a cold soak to enhance aromatics, fermentation commenced with selected yeast, with daily pump overs (13 times) to refine extraction. A week of post ferment maceration followed, developing a complete tannin structure.
